INSTRUCTIONS
This recipe is from Norene Gilletz`s book MealLeaniYumm...k?
Preheat oven to 350'. In a large mixing bowl combine eggs with sugar
& mix well. Add apples, matza meal & lemon juice. Mix until smooth.
Soak apricots in hot water 5 minutes & drain well. Spray 7x11 pyrex
casserole & spread 1/2 of the mixture in the pan. Arrange apricots in
a single layer over the batter. Top with remaining batter, spreading
evenly. Sprinkle with cinnamon-sugar. Bake at 350' about 1 hour,
until golden.

Reheats well & can be frozen
