Apple Flax Seed Muffins

INGREDIENTS

6 tb Flax seeds; ground in a coffee
; or
Spice grinder
1 c Unbleached white flour
3/4 c Whole wheat flour
1/2 c Sugar
1 tb Baking powder
3/4 ts Salt
1 Green apples; seeded & chunked
1 1/4 c Plain soy milk
2 tb Vegetable oil
12 Walnut halves; (optional)
2 tb Brown sugar; (optional)

INSTRUCTIONS

Preheat oven to 375 F. Line 12 medium muffin cups with paper liners or
spray bottoms with cooking spray. In a food processor, combine ground
flax seeds, flours, sugar, baking powder, and salt. Pulse a few times
to mix. Transfer mixture to a large mixing bowl. In food processor,
pulse apple chunks until finely chopped. Add soy milk and oil and
process a few seconds to combine. Add wet ingredients to dry and stir
by hand, quickly and lightly, until just mixed. Divide batter evenly
between twelve prepared muffin cups. If desired, top each muffin with
a walnut half and sprinkle with brown sugar. Bake for 20 to 25
minutes.
