Applesauce Bread

INGREDIENTS

2 lg Eggs
2/3 c Brown Sugar; firmly packed
1/3 c Cooking Oil
1 c Applesauce
1 1/2 c All-purpose Flour; sifted
1 ts Baking Powder
1 ts Baking Soda
1 ts Salt
1 ts Ground Cinnamon
1/2 ts Nutmeg
1 1/2 c Rolled Oats
3/4 c Prunes; diced
1/2 c Walnuts; chopped

INSTRUCTIONS

Makes 1 Loaf
Pre-heat oven to 350-F degrees and lightly grease a 9-inch by 5-inch
by 3-inch loaf pan; set aside.
Beat together the eggs, brown sugar, and cooking oil in a mixing
bowl. Stir in the applesauce and blend again.
Sift in the flour, baking powder, baking soda, salt, cinnamon, and
nutmeg. Add the rolled oats, prunes, and nuts to the mix and blend
well.
Spoon the dough into the prepared loaf pan and bake for 45 to 50
minutes, or until a toothpick stuck into the center of the loaf can
be cleanly removed.
Let cool in the loaf pan on a wire rack for a few minutes, then
remove from the pan to finish cooling. Store in an airtight container
when completely cooled.
