Asparagus with Lime Butter

INGREDIENTS

2 lb Fresh asparagus
2 tb Unsalted butter
1/2 Lemon; Juice of
Freshly grated nutmeg
2 c Cooked white rice
Salt and black pepper

INSTRUCTIONS

In a deep wide frying pan cook asparagus in water over high heat until
spears are tender. Drain. Cut spears into thirds. Melt butter in
frying pan & add lemon juice. Grate in nutmeg. Add salt & black
pepper. Place asparagus in mixing bowl with rice. Pour sauce over &
toss well. Adjust seasoning to taste. Approximately 6-8 minutes.
Per serving: 806 Calories; 26g Fat (29% calories from fat); 21g
Protein; 126g Carbohydrate; 66mg Cholesterol; 20mg Sodium
