Australian Rock Lobster with Spiced Bbq Sauces

INGREDIENTS

6 Lobster 'A's'
Fresh herbs
Garlic
Dijon mustard
Butter
8 Tomatoes; chopped and
; deseeded
150 ml Vinegar; (1/4 pint)
1/2 Piece ginger; chopped
2 Cloves garlic
1 Piece chilli
1/2 Onion
150 g Sugar; (5oz)
Curry powder
Cardamom
Coriander; fresh stalks
Cumin
Fish sauce

INSTRUCTIONS

BBQ SAUCE
Reduce the vinegar and sugar until caramelised, add ginger, garlc,
chilli and spices. Cook for 2 minutes, add chopped tomatoes and
continue to cook. Blend, return to heat and finish with fish sauce
and seasoning.
Split lobster, brush with oil then mark on a hot grill. Spread herb
butter onto the lobster and roast in hot oven.
Serve sauce along side.
