God's children should not doubt His love when He afflicts. Christ loved Lazarus peculiarly, and yet He afflicted Him very sore. A surgeon never bends his eye so tenderly upon his patient, as when he is putting in the lancet, or probing the wound to the very bottom. Avocado-Stuffed Rainbow Trout

INGREDIENTS

4 Rainbow trout cleaned and gutted
Olive oil
1 Ripe avocado pear; peeled and chopped
1/2 Lime; juice of
2 oz Chopped pistachio nuts
1 tb Clear honey
1 tb Light soy sauce
2 oz Cooked white rice
1 tb Chopped fresh coriander
Salt and black pepper
Lime slices
Coriander leaves

INSTRUCTIONS

STUFFING
TO GARNISH
Wash and prepare the trout. Mix all the ingredients together to form a
moist stuffing. Fill the inside of the trout with the stuffing, make
sure all gaps are well packed. Brush olive oil over the fish and bake
in a moderate oven for 20 to 25 minutes.
