INGREDIENTS

50 g Butter
1 Pineapple; flesh removed and
; diced, the outside
; left intact in a
; boat shape
A lime; peeled and
; segmented
50 g Caster sugar
25 g Fresh white breadcrumbs

INSTRUCTIONS

Preheat the oven 220c/425f.
1 Melt the butter in a griddle pan. Add the diced pineapple and
limes. Cook for 4-5 minutes, then tip back into the pineapple shell,
ensuring all the butter is tipped in as well.
2 Top with the breadcrumbs and bake in the oven for 10-12 minutes.
Serve immediately.
