Black Pudding En Papillotes

INGREDIENTS

4 Black puddings; (i.e. about 600 g).
4 Pieces aluminium foil.
Mustard

INSTRUCTIONS

1 Preheat the oven (gas mark 7 / 425F / 220C).
2 Put each black pudding on a piece of aluminium foil and wrap up,
twisting each end of the paper to close them securely.
3 Put the papillotes in the preheated oven and cook for 25 minutes.
4 Remove the black puddings from the foil and serve hot with mustard.
Campanile tip:
Serve with mashed potatoes or a gratin dauphinois.
Black pudding is one of the oldest forms of charcuterie. Its
invention is attributed to Ancient Greece.
