Brown Onion Gravy

INGREDIENTS

2 Onions; sliced
1/2 ts Dark brown sugar
1 ds Brandy
1/2 Glass red wine
20 g Vegetable oil; (3/4 oz)
290 ml Gravy or thickened stock; (1/2 pint)

INSTRUCTIONS

Brown the onions with oil until dark but not burnt. Add the sugar and
caramelise. De-glaze and flame with brandy and add the wine, reduce
by 2/3 before adding the gravy, check seasoning.
