INGREDIENTS

2 lb Coarsely ground lean beef
3 tb Minced shallots or green onions
1 tb Fresh chopped marjoram or oregano; (or 1
ts Dried
Marjoram or oregano plus 1 tablespoon
Minced fresh parsley)
2 tb Cold unsalted butter (no substitutions); chopped fine
1 ts Salt
1/4 ts Freshly ground pepper
1 tb Olive oil

INSTRUCTIONS

Heat grill or broiler. Combine ground beef, shallots, marjoram,
butter, salt and pepper in large bowl, tossing with fork until just
blended. (Mixture should be crumbly, not mashed.) Divide mixture into
quarters. Gently shape into four 1 1/2-inch-thick patties. Brush both
sides of patties with oil. Grill or broil 3 to 4 inches from heat
source 6 to 7 minutes each side until instant-read meat thermometer
inserted in center of patties registers 160°F. for medium. (Or heat
cast iron skillet over medium heat; add patties and cook 5 to 6
minutes per side.) Transfer to plates. Makes 4 servings.
