Carbonara Sauce

INGREDIENTS

175 g Smoked streaky bacon; chopped (6oz)
2 tb Sunflower oil
250 g Mushrooms; sliced (8oz)
3 md Size egg yolks; beaten
1 142 millilit single cream; (5 floz)
4 tb Chopped fresh parsley
1/4 ts Grated nutmeg
Salt and freshly ground black pepper

INSTRUCTIONS

1. Fry the bacon in the oil until crisp. Remove the bacon from the
pan. Drain all but 1 tablespoon of the fat from the pan.
2. Fry the mushrooms for about 4 minutes until soft.
3. Add the egg yolks and cream to freshly cooked pasta and toss well.
4. Mix in the bacon, mushrooms, parsley, nutmeg and seasoning.
5. Garnish with parsley and serve with parmesan cheese.
