Caribbean Coconut Shrimp

INGREDIENTS

1/2 c Fresh lime juice
2/3 c Canned cream of coconut
1 tb Curry powder
1/4 ts Cayenne pepper
1/2 ts Salt
1/2 c Minced green onion
2 lb Fresh shrimp; shelled & deveined

INSTRUCTIONS

Combine first 6 ingredients and mix well. Place shrimp on skewers.
Brush sauce on shrimp while grilling until done, about 3 minutes per
side. Serve with remaining sauce. Yield: 4 to 6 servings. Chicken can
be substituted for shrimp.
