Cauliflower Fritters

INGREDIENTS

1/2 c Self raising flour
2 c Plain flour
1 Whole cauliflower
1 Zucchini; (skin removed and
; grated)
1/2 ts Salt and pepper
2 c Parmesan cheese
1/4 c Chopped parsley
5 Eggs
Water

INSTRUCTIONS

Mix flours, salt, cheese, parsley with eggs and a little water. Whisk
with a fork.
Blanch the cauliflower and toward the end add the grated zucchini and
blanch for 1 minute.
Strain, both the cauliflower and zucchini and add to the batter.
Allow to rest for 30 minutes before taking a spoonful and frying in a
little oil for 1-2 minutes on each side.
