Celery, Spinach And Feta Parcels

INGREDIENTS

1 sm Pack Feta cheese
1/2 lb Fresh spinach
2 Sticks celery
2 Rashers smoked bacon
1/2 pk Filo pastry
4 oz Butter
Black pepper and salt
Nutmeg

INSTRUCTIONS

Cut the bacon into fine strips and finely dice the Feta and celery.
Wash and remove stalks and finely shred the spinach. Melt butter and
cut pastry into 4 inch squares.
Cook the bacon and celery in a little butter, add the spinach, and
allow to cool slightly.
Add the cheese, grated nutmeg and season to taste.
Brush the individual cake moulds with butter. Brush each square with
butter and layer three together to form a star.
Place in a mould, put a teaspoon of the mixture in the centre and
fold in the excess pastry.
Brush with butter and place in a hot over (200 C / 392 F) for
approximately 5-10 minutes until golden brown.
Serve hot with a crisp salad garnish and vinaigrette.
