There is enough in God to furnish us with matter of joy in the worst circumstance on earth… Joy in God is a duty of great consequence in the Christian life; and Christians need to be again and again called to it.

Cheese Squares with Salsa

INGREDIENTS

6 Eggs
1 c Cheddar cheese
1 c Monterey jack cheese
1 c Cottage cheese
1/4 ts Cayenne
1/4 c All-purpose flour
2 tb Jalapeno peppers
1/2 ts Baking powder
1 Jar salsa

INSTRUCTIONS

Mix together eggs, cheddar cheese, jack cheese, cottage cheese,
cayenne & flour, peppers & baking powder. Whisk until well blended.
Pour into glass baking dish. Cook in microwave, uncovered, on 70%
power, until set. Turn dish if eggs appear to be cooking unevenly.
Cook about 15 minutes. Let sit for about 5 minutes. Cut into squares
to serve.
Approximately 8-20 minutes.
Per serving: 1651 Calories; 106g Fat (57% calories from fat); 124g
Protein; 55g Carbohydrate; 1337mg Cholesterol; 4470mg Sodium
