Chili Cheese Cornbread

INGREDIENTS

6 tb Unsalted butter
1 cn Corn
1/2 c Sour cream
2 lg Eggs
1 c Yellow cornmeal
1 ts Salt
1 tb Baking powder
1/2 c Monterey jack cheese
2 Scallions
1/2 ts Red pepper flakes

INSTRUCTIONS

Preheat oven to 375.
Beat together melted butter, corn, sour cream and eggs together in
mixing bowl. Mix together cornmeal, salt and baking powder. Stir dry
ingredients into egg mixture. Blend well. Stir in cheese, scallions
and red pepper flakes. Pour into a buttered baking pan and bake for
20 minutes until golden brown.
Approximately 20-24 minutes.
Per serving: 1818 Calories; 126g Fat (61% calories from fat); 44g
Protein; 134g Carbohydrate; 664mg Cholesterol; 3722mg Sodium
