Chilled Mint And Cucumber Soup

INGREDIENTS

1 Cucumber; peeled and chopped
1 Garlic clove; crushed
1 Spring onion; chopped
300 ml Low-fat natural yoghurt
3 tb Creme fraiche
2 tb Fresh mint; finely chopped
1 ts Ground coriander
Salt and pepper
Diced cucumber
1 Sprig mint

INSTRUCTIONS

GARNISH
Puree all the ingredients together in a liquidiser, then transfer to a
large bowl. Season well and chill the soup thoroughly in the
refrigerator before serving.
Garnish with mint and diced cucumber.
