When a Calvinist says that all things happen according to the predestination of God, he speaks the truth, and I am willing to be called a Calvinist. But when an Arminian says that when a man sins, the sin is his own, and that if he continues in sin, and perishes, his eternal damnation will lie entirely at his own door, I believe that he speaks the truth, though I am not willing to be called an Arminian. The fact is, there is some truth in both these systems of theology.

Chocolate Souffles

INGREDIENTS

2 tb Cream
150 g Dark cooking chocolate; chopped (5 oz)
2 ts Butter
2 Egg yolks
2 tb Sugar
A pinch of cream of tartar
6 Egg whites
Icing sugar for dusting

INSTRUCTIONS

Bring cream to the boil in a saucepan and on low heat, mix in
chocolate until just melted. Remove from heat and whisk in butter.
Beat egg yolks and sugar until creamy.
Combine chocolate mixture with egg yolk and sugar.
Add a pinch of cream of tartar to egg whites and beat until stiff.
Fold a little of the beated egg whites into the chocolate mixture,
then using a rubber spatula, gently fold in remaining whites. Fill
souffl. moulds to the riim and gently flatten the top, using the
spatula.
Place moulds on a baking tray and place in preheated oven. After 5
minutes, increase temperature to 200.C/400.F. The cooking time may
vary from 12 to 18 minutes depending on the size of the moulds. When
cooked, remove souffl.s from oven, dust with icing sugar and serve
immediately.
