Cracked Wheat Salad

INGREDIENTS

125 g Cracked wheat; (bulgar wheat) (4oz)
2 tb Lemon juice
1 tb Olive oil
2 Tomatoes; chopped
75 g Ready-to-eat dried apricots; chopped (3oz)
4 Spring onions; chopped finely
4 tb Chopped fresh mint
Pepper

INSTRUCTIONS

GENERAL
Soak the cracked wheat in plenty of fresh cold water for about 20
minutes.
Rinse and drain the cracked wheat, squeezing out any excess water.
Place the cracked wheat, in a bowl, add the lemon juice and oil, and
season with pepper. Mix well, then leave for about 1 hour or until
the cracked wheat has absorbed the dressing.
Add the tomatoes, apricots, spring onions, parsley and mint just
before serving.
