Creamed Spinach

INGREDIENTS

2 lb Fresh spinach; washed and trimmed
4 tb Unsalted butter
3 tb All-purpose flour
1/2 c Milk
Freshly grated nutmeg

INSTRUCTIONS

1. Bring 1/4 cup of water with a tablespoon of salt to a boil in a
large saucepan. Add the spinach, cover, and steam until just tender,
3 to 4 minutes.
2. Drain in a colander placed over a bowl. When cool, press the
leaves to remove excess liquid. Chop the spinach coarsely by hand.
3. Melt the butter in a heavy saucepan. Add the flour and cook,
stirring over low heat for 3 minutes. Remove from the heat. In a
separate pan, bring the milk to a boil. Whisk the liquid into the
flour and butter mixture and cook, stirring over low heat until the
mixture thickens.
4. Allow to cook, stirring occasionally, for another 15 minutes.
Season with nutmeg and salt and pepper (if the sauce is too thick,
thin with heavy cream or milk).
5. Stir the spinach into the sauce and taste again for seasoning. ©
