Creamy Lemon-Herb Dressing

INGREDIENTS

2 ts Grated lemon zest
1 tb Freshly squeezed lemon juice
2 tb Minced chives
1 tb Chopped fresh basil
2 tb Chopped fresh dill
1 tb Chopped fresh tarragon
8 oz Silken tofu
1 tb Dijon mustard
1 tb White wine vinegar
1/2 ts Salt; or to taste
1/4 ts Pepper; or to taste

INSTRUCTIONS

Place all ingredients in food processor; process until smooth and
creamy. Add additional salt and pepper if desired.
Per (1-tablespoon) serving: 8 calories (48 percent from fat), 1 gram
total fat (no saturated fat), no cholesterol, less than 1 gram
carbohydrates, 1 gram protein, 53 milligrams sodium, no dietary fiber.
