Festive Fruit And Nut Cake

INGREDIENTS

1 1/4 c Dried apricots, quartered
2 1/2 c Red and green candied cherries, halved
3/4 c Raisins
1/2 c Pitted prunes
1 1/2 c Brazil or macadamia nuts
1 c Walnuts or pecans
1 c Almonds, finely chopped
1/2 ts Baking powder
3 Eggs
2 tb Honey
2 ts Vanilla extract

INSTRUCTIONS

Preheat the oven to 300°F.  Grease two 7x3 inch loaf pans and line with wax
paper.  Combine the fruit, nuts and baking powder.  Beat the eggs until
thick and creamy.  Beat in the honey and vanilla.  Pour the egg mixture
into the fruit mixture and combine thoroughly.  Spoon into the pans. Bake
for 1 1/2 hours.  Allow to cool completely in the pans. Makes 2 loaves.
