INSTRUCTIONS
In a large bowl, whisk together the biscuit baking mix, cornmeal, club
soda, and eggs until well combined. Dip the cheese pieces into the batter,
coating completely. In a large skillet, heat 1 inch oil over high heat
until hot but not smoking. Fry the coated cheese pieces a few at a time for
1 to 2 minutes, turning to brown on all sides. Drain on a paper towel-lined
platter. Serve hot.
NOTE: I like to use mozzarella or Cheddar cheese, but almost any type of
cheese can be used for this. Try pepper-jack cheese for a touch of
spiciness. And make sure whatever cheese you use is well chilled - that way
it won't ooze out of the batter when it's fried.
