INGREDIENTS

3/4 lb Tomatillos
1/2 sm Onion; finely chopped
1 Serrano chile; finely chopped
1 sm Yellow chile; finely chopped
2 ts Freshly-squeezed lemon juice
2 md Garlic cloves; minced
2 tb Chopped cilantro
1/2 ts Salt

INSTRUCTIONS

Put tomatillos into a pan with water to cover and bring to a boil. Simmer
gently for 10 minutes. Drain, cool, and core. Cut tomatillos into small
dice or finely chop in a food processor fitted with the steel blade. Place
in bowl. Add remaining ingredients and mix well. Cover and refrigerate.
This recipe yields 2 1/2 cups of salsa.
