We Love God!

God: "I looked for someone to take a stand for me, and stand in the gap" (Ezekiel 22:30)

We are so little and vain that the esteem of five or six persons about us is enough to content and amuse us.
Blaise Pascal

A lamb is a meek creature. It hurts none, is hurt by all; it hangs not back, when it is led to the slaughter; it cries not when it is pierced; no greater emblem of patience to be found among irrational creatures. To this the prophet likens our Savior, when he said, “He was brought as a lamb to the slaughter, and as a sheep before the shearers is dumb, so he opened not his mouth,' Isaiah 53:7. How strange was His humility in entering into such a life!

Essnce06 4 servings

INGREDIENTS

2 tb Unsalted butter
1/4 c Chopped shallots
1 c Sliced button mushrooms
1 c Sliced shiitake mushrooms
1 c Sliced oyster mushrooms
Salt; to taste
Freshly-ground black pepper; to taste
1/2 c Soy sauce
2 tb Dry sherry
1 1/2 lb Flank steak

INSTRUCTIONS

Preheat the grill or broiler. Meanwhile prepare the stuffing. In a saute
pan, melt the butter and saute the shallots for 5 to 8 minutes, until they
start to soften. Add the mushrooms, season with salt and pepper. Cook them
until they become tender, about 5 minutes. Let cool and set aside.
Meanwhile, prepare the marinade. In a bowl mix together the soy sauce and
sherry, and season with salt and pepper. Place meat in a glass baking dish,
pour in marinade over the meat and marinate for 30 minutes on each side.
Transfer the meat to a flat surface, reserving the marinade, and spread the
stuffing over the meat. Roll the meat, lengthwise, over the filling and tie
it into place with twine. Brush with the reserved marinade and place under
the broiler or grill on both sides for about 30 minutes or until desired
doneness. This recipe yields 4 servings.
