It is the brightest star that ever cast its radiance over the darkened soul, and one that seldom sets in the gloom of morbid fancies and forboding imaginations.

Herby Mushroom Pasta

INGREDIENTS

2 oz Spinach tagliatelle
1 sm Onion; chopped
1/2 tb Vegetarian margarine
5 oz Button mushrooms; sliced
1 oz Fresh basil; finely chopped
1/2 c Lowfat sour cream
Salt and black pepper
1 pn Cayenne pepper

INSTRUCTIONS

1. Boil the tagliatelle in salted water for about 10 minutes, drain and
keep warm.
2. Sweat the onions in the margarine until transparent, add the mushrooms
and cook gently for about 10 minutes. Add the basil and cream and season
with salt, pepper and cayenne. Pour over the pasta.
