INGREDIENTS

1 cn Spam Lite luncheon meat -; (12 oz)
1 pk Monterey Jack cheese -; (8 oz)
1 pk Frozen phyllo pastry- (16 oz); thawed
Butter-flavored cooking spray
1 1/2 c Sliced pickled jalapeño pepper
Fresh chives; (optional)

INSTRUCTIONS

Cut Spam Lite into 6 slices, and cook in a nonstick skillet over medium
heat; drain well. Cut each slice into 6 strips. Cut cheese crosswise into
12 slices; cut each slice into 3 strips.
Place 1 sheet of pastry on a flat surface (keep remaining pastry covered
with a damp towel). Lightly coat pastry sheet with cooking spray. Repeat
procedure with 2 more pastry sheets and cooking spray.
Cut pastry stack in half lengthwise; cut each portion into 3 pieces. Repeat
procedure with remaining pastry sheets and cooking spray.
Place 1 Spam Lite strip, 1 cheese strip, and 3 jalapeño pepper slices on
each pastry square Starting with long end, roll pastry around Spam, cheese,
and pepper slices. Twist ends to seal; place on baking sheet. Freeze 1
hour.
Bake at 400 degrees for 12 minutes. Tie ends with chives, if desired.
This recipe yields 3 dozen.
Bonus: For Mediterranean Crackers: You may substitute 1 (13-ounce) jar
Peloponnese roasted sweet pepper strips, drained; 1 (4-ounce) package
crumbled feta cheese; and 1 cup Peloponnese kalamata olive spread for Spam
Lite, Monterey Jack cheese, and jalapeño peppers.
