Holiday Roast Beef Salad

INGREDIENTS

8 oz Alfalfa sprouts
1 lb Roast beef, thinly sliced
1 14 oz. can artichoke hearts, drained and halved
1 sm Red pepper, seeded and cut into strips
1/2 c Olive or vegetable oil
1/4 c Wine vinegar
Salt and pepper
Chopped parsley

INSTRUCTIONS

Arrange the alfalfa sprouts on a large platter.  Roll up the roast beef
slices and arrange on top of the sprouts.  Place the artichoke hearts
between the beef rolls and garnish the center with red pepper strips. Mix
the oil, vinegar, and salt and pepper to taste.  Spoon over the salad.
Sprinkle with chopped parsley.  To make ahead, keep the salad and dressing
separate until serving time.  Serves 8  Typed in MMFormat by
