Hot-Pepper Sweet Potatoes

INGREDIENTS

2 ts Olive oil
1/2 c Fat-free; low-salt chicken
Broth
2 md Garlic clove; minced
3/4 lb Sweet potatoes; peeled, and
Cut in 1" cubes
Several drops hot pepper sauce
Salt
Freshly ground pepper

INSTRUCTIONS

Heat a nonstick skillet large enough to hold potatoes in 1 layer over
medium heat. Mix oil, broth and garlic; add to skillet. Add potatoes,
making sure they are in 1 layer. Cover; simmer 15 minutes. Sprinkle with
pepper sauce and salt and pepper. Yield: 2 servings.
