A soul under the power of conviction from the law is pressed to fight against sin, but hath no strength for the contest. They cannot but fight, and they can never conquer; they are like men thrust on the sword of enemies on purpose to be slain. The law drives them on, and sin beats them back.

Knuckle of Deer with Wine, Garlic And Rosemary

INGREDIENTS

4 Knuckles of roe deer; (ask your game
; dealer)
3 Cloves garlic; crushed
1 Sprig fresh rosemary
2 Glasses good dry white wine
Extra virgin olive oil
Salt and pepper

INSTRUCTIONS

Seal and colour the knuckles in olive oil. Add the garlic and rosemary and
cook for two more minutes.
Add the salt, pepper and wine and cover. Cook very gently for one hour or
until tender - if they are too dry, then add some stock.
