The soldiers that spat upon Him, and mocked Him, met not with a reproachful expression from Him. He held His peace at their clamors, offered His back to their scourges, reviled them not when He lay under the greatest violence of their rage, was patient under His sufferings, while He was despised more than any man by the people. Light Caesar Salad

INGREDIENTS

1/2 c Reduced-fat ricotta cheese
1 c Nonfat plain yogurt
2 tb Red wine vinegar
1/4 c Capers; rinsed
3 tb Fresh chives
2 tb Fresh parsley
1/2 Yellow onion; rough chopped
4 Cloves garlic
3 tb Fresh basil
1/4 c Dijon mustard
Salt and pepper; to taste
1 Head romaine lettuce
Washed and torn into small pieces
Capers and croutons as garnish; (optional)

INSTRUCTIONS

MAKES 6 SERVINGS LACTO
This dressing gets its tangy flavor from capers and garlic instead of the
usual anchovies. Using low-fat ricotta and yogurt instead of oil keeps it
creamy and light.
In blender, puree all ingredients except lettuce until smooth. Toss
dressing with lettuce and garnish with additional capers and croutons if
desired. Makes 2 1/2 cups dressing or 6 cups dressed salad.
