Lime And Coriander Bream

INGREDIENTS

30 ml Olive oil; (2tbsp)
5 ml Clear honey; (1tsp)
Juice and zest of 1/2 lime
1 Clove garlic; crushed
2 1/2 Cm; (1") piece root
; ginger, peeled and
; finely grated
15 ml Fresh coriander; finely chopped
; (1tbsp)
2 1/2 ml Each of ground cumin and ground coriander; ( 1/2tsp)

INSTRUCTIONS

~- salt & freshly ground black pepper 4 red sea bream steaks -- each
weighing -- approximately 175g -- (6oz)
Mix together all the ingredients except the fish.
Place steaks on a foil-lined grill rack. Spread one side of each steak with
half the lime mixture.
Place under a preheated medium grill for 5-6 minutes. Turn steaks over,
spread with remaining mixture and grill for a further 5-6 minutes or until
the fish is cooked. This dish needs only simple accompaniments such as new
potatoes and a green vegetable.
