So when we call pain a problem, we claim we do not deserve it. We are even prepared to scuttle God to maintain our own innocence. We will say that God is not able to do what He would like, or He would never permit persons such as ourselves to suffer. That puffs up our egos and soothes our griefs at the same time. “How could God do this to me?” is at once an admission of pain and a soporific for it. It reduces our personal grief by eradicating the deity. Drastic medicine, indeed, that only a human ego, run wild, could possibly imagine.

Low-Fat Enchilada Casserole

INGREDIENTS

1 lb Ground sirloin; or 90% lean beef
1 lb Macaroni; cooked according to
; package
; instructions
1 lb Frozen corn; regular or mixed w/
; red and green
; pepper
1 cn Progresso tomato sauce; (28-oz)
2 cn Rotel tomato
1 lg Onion; chopped
1 Green pepper; chopped
2 pk Lawry's taco seasoning
1 ts Garlic powder
Grated non-fat cheddar cheese; optional

INSTRUCTIONS

Preheat oven to 350 degrees.
Brown ground meat in skillet. Place browned meat in colander and rinse
under hot water to remove any excess fat drippings, drain.
In large saucepan, brown onions and add green peppers. Add ground meat,
tomato sauce, tomatoes, and seasonings. Cook for 10 minutes. Add a little
water if sauce is too thick. Add corn. Stir to mix. Add macaroni.
Place mixture in a large casserole, sprinkle with cheese if desired. Bake
20 minutes at 350 degrees or until bubbly.
Note: You may add more corn, fresh tomatoes, picante sauce or jalapeno
peppers. Serves 4-6.
