In 1 Peter 1:6 we read, “In this you greatly rejoice, even though now for a little while, if necessary, you have been distressed by various trials.” Only in the Christian faith can we speak of joy and distress in the same sentence! You see, if my faith is to be pure faith, it will weather the fiery tested when tried. And how is that faith proven? It keeps trusting God and thus greatly rejoicing, even when experiencing distress.

Maple Glazed Pork And Bartletts

INGREDIENTS

3 Fresh Northwest Bartlett Pears
3/4 c Maple flavored syrup
1/2 c Brown sugar
2 tb Prepared mustard
2 tb Butter
1 tb Whole cloves
2 1/2 lb Rolled trimmed pork loin roast; (2 1/2 to 3)
Salt and pepper

INSTRUCTIONS

Place pork on rack in shallow roasting pan. Season with salt and pepper.
Insert meat thermometer. Roast at 325 degrees until thermometer registers
170 degrees, or about 35 to 40 minutes per pound. Meanwhile, halve and core
pears, leaving skins on. Combine maple syrup, brown sugar, mustard, butter
and cloves. Stir over low heat until the sugar has dissolved. During last
30 minutes of pork roasting time, place pears, cut side up, in roasting pan
with pork. Baste pears and pork frequently with maple glaze. Serve glazed
pear halves as accompaniment to pork. Serve with brown rice, or rissoto.
Always be sure to use ripe pears.
