There is no use trying to be more spiritual than God. God never meant man to be a purely spiritual creature. That is why He uses material things like bread and wine to put the new life into us. We may think this rather crude and unspiritual. God does not: He invented eating. He likes matter. He invented it. I know some muddle-headed Christians have talked as if Christianity taught that sex, or the body, or pleasure, were bad in themselves. But they were wrong. Christianity is almost the only one of the great religions which thoroughly approves of the body – which believes that matter is good, that God Himself once took on a human body, and that some kind of body is going to be given to us even in Heaven and is going to be an essential part of our happiness, our beauty, and our energy.

INGREDIENTS

4 Egg whites 4
1 c Granulated sugar 250 mL
2 ts White vinegar 10 mL
1 1/2 c Yogurt cheese 375 mL
2 tb Honey or icing sugar 25 mL
1 ts Vanilla 5 mL
4 c Fresh berries 1 L
Fresh edible flowers

INSTRUCTIONS

In large bowl, beat egg whites until light.
Gradually add sugar to egg whites and beat until firm. Beat in vinegar.
Line a baking sheet with parchment paper. Spoon egg whites in small rounds
and spread in loose waves. Bake in preheated 275F/140C oven for 30 to 40
minutes.
Meanwhile, in a small bowl, combine yogurt cheese, honey and vanilla.
Just before serving, spread yogurt mixture over meringue. Top with berries
and scatter flowers over top. Serve immediately.

NOTES : This beautiful dessert, from More HeartSmart Cooking With Bonnie
Stern, is also low in fat. If berries are not in season, try using mangoes,
oranges, kiwi, bananas, or caramelized apples or pears. Frozen yogurt or
sorbet can be used as a topping instead of yogurt cheese. This recipe
yields about 30 "tarts".
