Nectarine Oat Muffins – Cape Fruit

INGREDIENTS

2 c Whole-wheat flour
1 c Rolled oats
1/2 c Unprocessed bran
1/2 c Brown sugar
1 1/2 ts Baking soda
1 1/8 ts Salt
2 Eggs
1 5/8 c Buttermilk
1/4 c Vegetable oil
3 Nectarines; chopped
3 ts Orange zest
1 1/2 ts Cinnamon

INSTRUCTIONS

TO MAKE 20 small muffins. Some measures were converted from metric units.
Combine all ingredients in mixing bowl. Stir until blended. Spoon batter
into small non-stick muffin cups. Bake in preheated oven at 400F/200C for
20    minutes.
