In Shansi I found Chinese Christians who were accustomed to spend time in fasting and prayer. They recognized that this fasting, which so many dislike, which requires faith in God, since it makes one feel weak and poorly, is really a Divinely appointed means of grace. Perhaps the greatest hindrance to our work is our own imagined strength; and in fasting we learn what poor, weak creatures we are-dependent on a meal of meat for the little strength which we are so apt to lean upon.

New Potato, Cashew Nut And Orange Salad

INGREDIENTS

500 g New potatoes; (1lb)
125 g Cashew nuts; (4oz)
4 lg Tomatoes; skinned and sliced
1 120 g pack watercress
1 ts White wine vinegar
1 ts French mustard
2 tb Orange juice
Grated rind of 1 orange
100 ml Olive oil; (31/2fl oz)
Salt and freshly ground black pepper

INSTRUCTIONS

FOR THE SALAD
FOR THE ORANGE DRESSING
Combine the salad ingredients.
Place all the ingredients for the dressing in a liquidizer and blend until
creamy.
Just before serving and while the potatoes are still warm toss the salad in
the dressing.
