Onion And Ginger Marmalade for the Ham

INGREDIENTS

6 lg Onions – sliced
3 tb Dark muscavado sugar
2 tb Ginger preserve
2 tb Olive oil
2 tb White wine vinegar
1 sm Glass of dry white wine vinegar
1/2 ts Chopped fresh sage

INSTRUCTIONS

1 Soften the onion in oil - don't brown. Add the wine vinegar, reduce for
25 minutes and stir in the preserve and sugar until dissolved and
caramelised.
