INSTRUCTIONS
In deep skillet, arrange fish. Cover fish with wine and water. Cover with
lid and cook on medium heat until fish flakes easily with fork. Meanwhile,
in second skillet, melt butter over medium heat. Add garlic and onion.
Saute with skillet away from heat, add dark rum, orange juice, marmalade
and mandarin oranges. Return to heat. Add fish into orange juice mixture in
skillet. Increase skillet to high heat and reduce liquid to 3/4 cup. To
serve, arrange fish on platter. Pour sauce over fillets.
