Orange-Glazed Snow Peas

INGREDIENTS

1/2 c Fresh orange juice
2 tb Julienned orange zest
2 tb Honey
1 tb Butter or margarine
1/8 ts Ground cardamom
1 ds Ground cloves; (optional)
1 1/4 lb Snow peas; strings removed

INSTRUCTIONS

6 SERVINGS LACTO
Cloves and cardamom give this citrusy glaze a rich flavor.
IN SMALL SAUCEPAN, combine all ingredients except snow peas. Bring mixture
to a boil. Reduce heat and simmer until liquid is reduced to about 1/4 cup.
Blanch snow peas in boiling water about 30 seconds; drain. Immediately
transfer snow peas to serving dish. Pour orange sauce over snow peas and
toss to coat. Serve hot.
