INGREDIENTS

2 lb Oregon Dungeness Crab Meat
2 cn Artichoke heart quarters; very well drained
; (14 ounce)
1 4 ounces jar diced red pimientos
12 oz Parmesan cheese* grated; (reserve 3
; tablespoons for
; topping)
8 oz Sharp cheddar cheese; grated
1 lg Onion; thinly sliced
1 1/2 c Mayonnaise
1/4 c Parsley; chopped
1 md Lemon; zest and juice
2 ts Tabasco sauce

INSTRUCTIONS

*Asiago cheese may be substituted
Preheat oven to 400 degrees. Thoroughly drain crab meat, artichokes and
pimientos. Combine and mix all ingredients. Place mixture in ovenproof
serving dish. Sprinkle reserved 3 tablespoons cheese to coat the top. Bake
in center of oven for 20 to 25 minutes or until top is slightly browned.
Makes 12 to 16 servings as an appetizer; 6 to 8 as an entree.
