Outrageous Muffins – Bob’s Red Mill Natural Foods

INGREDIENTS

1/3 c Soy flour
1/3 c Brown sugar
1/3 c Cornmeal
1 c Flour; whole-grain wheat, OR triticale
1/4 c Wheat germ
3/4 ts Salt
1 c Almonds; ground
1 ts Baking soda
2 lg Eggs; beaten
1 c Plain lowfat yogurt
1 ts Vanilla
1/3 c Oil
Zest of 1 large orange
1/2 c Raisins OR currants
1/2 c Dried apricots; diced

INSTRUCTIONS

Mix dry ingredients and dried fruit together in a large bowl.
Combine wet ingredients and stir into dry ingredients just until moistened.
Batter should be lumpy.
Fill oiled or paper-lined muffin tins 2/3 full. Bake in preheated 350° F
oven for 25 minutes.
Makes 12 muffins.
