INGREDIENTS

2 lg Red onions; peeled and thinly
; sliced
1 tb Olive oil
3 c Red wine vinegar
1/4 c Olive oil
2 tb Sugar
6 Whole black peppercorns
4 Sprigs fresh thyme
2 tb Fresh thyme; finely chopped

INSTRUCTIONS

1. Saut. the onions over low heat in 1 Tbsp. olive oil until soft.
2. Place the vinegar, 1/4 cup olive oil, sugar, peppercorns, and thyme
sprigs in a large non-reactive saucepan and bring to a boil.
3. Add the onions to the hot liquid and simmer for 5 minutes. Remove the
pot from the heat and allow the onions to steep for at least 2 hours or
overnight (if storing overnight, place in a bowl and cover).
4. When ready to serve, drain the liquid and top with the chopped thyme. ©
