INGREDIENTS

4 Large; crisp pears, peeled
4 ts Granulated unrefined sugar
1 Star anise
1 Cinnamon stick
1 Bay leaf
Peel of 1/4 lemon
330 ml Cold water; (11 1/2fl oz)

INSTRUCTIONS

Boil the sugar, star anise, cinnamon, bay leaf and lemon peel gently in the
water until the sugar has melted and formed a light syrup. Place the peeled
pears with their stalks left on in the syrup. Add more water if necessary.
Boil gently, covered, until the pears are tender. Serve warm or cold.
