Potato Pancakes with Premium Ham

INGREDIENTS

125 g Self-raising flour; (4oz)
1 ts Bicarbonate of soda
100 ml Milk; (3 1/2fl oz)
100 g Cooked; mashed potato,
; seasoned (3 1/2oz)
1 md Size egg; lightly beaten
25 g Butter; melted (1oz)
2 tb Vegetable oil
1 125 gram pac English Premium ham
100 g Fruit chutney; (3 1/2oz)

INSTRUCTIONS

Sieve the flour and bicarbonate of soda into a medium mixing bowl.
Make a well in the centre, add the milk, mashed potato and egg. Stir with a
wooden spoon until well combined.
Add the melted butter and stir in.
Heat the oil in a frying pan. Spoon rounded tablepoonsful of the mixture
into the pan, about 2cm apart.
Cook over a medium heat for 3 minutes on each side until golden brown.
Cut the ham slices in half and place on to the potato pancakes.
Serve with the fruit chutney.
