He was born in an obscure village, the child of a peasant woman. He grew up in another obscure village, where He worked in a carpenter shop until He was thirty. While He was dying, His executioners gambled for the only piece of property He had – His coat. When He was dead, He was taken down and laid in a borrowed grave. Nineteen centuries have come and gone, and today He is the central figure for much of the human race. All the armies that ever marched, and all the navies that ever sailed, and all the parliaments that ever sat, and all the kings that ever reigned, put together, have not affected the life of man upon this earth as powerfully as this “One Solitary Life” (James Francis).

INGREDIENTS

1 1/4 lb Small new potatoes; (1 to 2 inches in
; diameter)
1 Hard-cooked large egg; peeled and chopped
3 tb Mayonnaise
3 tb Sour cream
1/4 c Finely chopped dill pickle
1 tb Finely chopped shallot
2 tb Dijon mustard
1 tb Finely chopped fresh tarragon leaves or 1
; teaspoon dried tarragon or to taste

INSTRUCTIONS

In a large saucepan combine potatoes with enough water to cover by 1 inch
and simmer until just tender, about 15 to 20 minutes. Drain potatoes and
cool until they can be handled. While potatoes are cooling, in a bowl
combine remaining ingredients with salt and pepper to taste. Cut potatoes
into quarters and gently toss with egg mixture. Serve potato salad chilled
or at room temperature.
