Potato, Lamb And Herb Style Saute

INGREDIENTS

2 tb Olive oil
25 g Butter; (1oz)
250 g Lamb stir-fry
500 g Punnet Anya potatoes; cooked, refreshed
; and sliced into 2cm
; (1 inch) pieces
50 g Cubed pancetta; (2oz)
125 ml Dry white wine; (4fl oz)
1 50 grams who black pitted olives; (2oz)
4 Sundried tomatoes sliced into 2cm; (1 inch) pieces
2 tb Freshly chopped thyme

INSTRUCTIONS

In a wok or large frying pan, heat the olive oil and butter until hot.
Saute the lamb, sliced potatoes and pancetta for 4-5 minutes, then pour
over the white wine. Add the pitted olives, sundried tomatoes and fresh
thyme and saute for a further 1-2 minutes.
Remove from the heat and serve immediately.
