Ruthie’s Chicken Nuggets

INGREDIENTS

1/2 Stick Unsalted butter
2 Garlic cloves; minced
1 c Fine fresh bread crumbs
1/4 c Freshly-grated Parmesan cheese
1 Whole Boneless skinless breast; cut 1" cubes

INSTRUCTIONS

Preheat the oven to 400 degrees. In a small saucepan melt butter with the
garlic and let the mixture cool. In a shallow bowl or pie plate toss the
crumbs with the Parmesan. Dip the chicken cubes first in the butter and
then in the bread crumb mixture, making sure that each cube is coated well
with crumbs. Arrange the chicken in one layer on a baking sheet and bake in
the preheated oven for 15 minutes or until the chicken is just cooked
through. Transfer to paper towels to drain. This recipe yields 2 kid
servings.
