INGREDIENTS

1 lb Salmon cooked and flaked
6 oz Pasta shells
1 lb Cherry tomatoes
5 oz Mange tout
Pesto dressing; (2 tablespoons light
; olive oil mixed
; with 1 tablespoon
; white wine vinegar
; and 1 tablespoon
; pesto)

INSTRUCTIONS

Cook and drain pasta shells according to instructions. Plunge mange tout in
saucepan of boiling water for 1 minute, allow to cool. Halve cherry
tomatoes. Dress salmon, pasta shells, cherry tomatoes and mange tout
separately with pesto dressing. Begin layering by compacting salmon in the
bottom of a round pyrex bowl. Follow with a layer of pasta shells. Then add
tomatoes and lastly the mange tout. Cover with a large plate and leave in a
cool place for at least an hour. Turn upside down onto a plate and serve.

NOTES : Perfect for a picnic - layer the salad into a bowl and cover with a
plate - when you reach your picnic site just turn it upside down and serve.
