Savoy Cabbage with Smoked Bacon And Shiitake Mushrooms

INGREDIENTS

1/2 oz Medium diced smoked bacon
1/2 tb Vegetable oil
1 oz Sliced shiitake mushrooms
1 ts Minced shallots
Salt to taste
Fresh ground pepper to taste
3 oz Cabbage leaves
1/2 ts White vinegar
1 ts Butter; (optional)
1 ts Sliced chives

INSTRUCTIONS

Heat a saucepan over a high heat. Add the bacon, toss until lightly brown.
Add the oil, then the mushrooms, toss until lightly brown, add the shallots
and season to taste. Add the cabbage leaves, toss the vinegar. Add the
vinegar. Add the butter (optional). Adjust the seasoning. Then add
chives-serve immediately.
